Rio Recipe: Steak Tacos

You asked for it, so here it is...

For last Friday's Facebook live video, we asked you lovely lot which was your favourite dish out of the four we rustled up that are perfect for this year's Summer of Sport. 

Time to get your taco on with these few, easy steps. 

What do I need?

A flat iron or sirloin steak that weighs in at 200g

x3 flour tortillas

For the chimichurri, you're gonna need this lot...

x1 tbsp of mint 

x1 tbsp of basil 

x1 tbsp of coriander 

x1 tbsp of  parsley 

½ shallot

½ red/green chilli

x1 minced garlic clove

x3 tbsp red wine vinegar

x5 tbsp olive oil

And last but not least, a pinch of salt and pepper.

How do I make 'em?

Finely chop half a shallot, the mint, coriander, basil, parsley and chilli.

Add this into a bowl and mix with the red wine vinegar, garlic and olive oil. 

Chimichurri = done.

Season the steak using salt, pepper and olive oil. 

Pan fry for 3 minutes on each side for medium rare, or go up to 5 if you like it a bit more well done. 

Take the steak out of the pan and rest on a chopping board or plate. 

Once rested for half of the cooking time, spoon the chimichurri over the steak and give it a move around to really mix in the dressing.

Slice the steak into strips and split between the tortillas.

Serve with guacamole, sour cream and salsa. Cos, obviously. 

BOOM. Dig in.
